Peaches

I made use of the last of the summer peaches this week with this Peach Crostada. Notice the rough edges and leaking juices and uneven shape. These imperfections are all the glory of the crostada (a.k.a. galette or, more directly, free-form tart). It is a rustic dish that benefits from a homey appearance. All you need is a good crust (buy one or try making your own – I love this super flaky recipe), some fruit (you don’t even need peaches – well, you need peaches to make a peach crostada, but any fruit can be used to make that kind of fruit crostada), a bit of sugar, and an oven.

Cut the fruit into vaguely bite-size pieces, sweeten it to taste, add a bit of cinnamon or lemon juice if you’re so inclined, pour it onto a rolled-out crust, fold the edges of the crust up over the edges of the fruit, and bake it in a hot oven until the crust is browned through and the fruit is bubbling in the center.
