friday food files with molly watson: spring risotto.

I love the idea of spring salads and light, veggie-laden meals, but it is still chilly out there. I want something to comfort me through the rain and warm these damp-chilled bones. Spring risotto is my answer. Tons of spring vegetables, creamy rice, young Pecorino cheese – all held together through the miracle that is chicken broth.
Play around with this recipe – use spring onions or even simple green onions in place of the green garlic, add some chopped fennel if that’s your thing, sprinkle with herbs, switch out the cheese, leave out the fava beans because they are just too much hassle and use more peas instead. Or not.


Serve this spring risotto as a side dish – divine with roast chicken or broiled fish or alongside pork of almost any kind – or make it the main event. I like mine with a boiled egg. A nice runny yolk would have been nice, but mistakes were made. The results, however, were still delicious.
