Every summer I think I can’t ever do it and every summer I somehow manage to make the dream come true: to eat my fill of sweet corn. I can get pretty far into the process with simple corn on the cob, well dabbed with butter, with bright crunchy bits of salt. At a certain point, though, I start to lose steam and I need to turn to other dishes.
