Springtime generally grants us an excuse to thaw out in the sunshine and take all of our meals outside (has it gotten warmer in your neck of the woods yet?!) but it usually leaves me scrambling to reconfigure the recipes in my repertoire for healthier fare. As soon as the seasons change I’m ready to switch up our typical hearty meals for something lighter, crisper, and springier (think salads of all kinds, farmers market finds, and citrus). Thankfully, the internet (aka Pinterest) runneth over with a million meals that are easy on the eyes, perfect for Springtime dining AND healthy to boot. Score!
So, when planning your menu this week, throw open the shades, let the sunshine in, and whip up something yummy. Spring time is calling!
